Moroccan chicken and butternut squash

The combination of Butternut squash or pumpkin and cinnamon is popular in the Moroccan kitchen. This recipe combines both with chicken and prunes. It comes out brown, sweet and tangy.

  • 8 chicken drumsticks 

  • 2 big onions, sliced 

  • About 3 cups butternut squash, diced

  • 2 tbsp olive oil 

  • 1 tsp cinnamon

  • 1 tsp Ras El Hanut

  •  1 tsp white pepper 

  • 1/2 cup water

  • 1/2 tsp. paprika 

  • 1 tbsp. salt

  • 1/2 tsp. black pepper 

  • 5 prunes, pitted

  1. Heat the oil in a pot and saute the chicken very well till it gets brown (about 10-15 min)

  2. Add the onions and spices and continue cooking. 

  3. Then add the water and prunes. Bring to a boil. Lower the heat and cook for 20 more minutes. 

  4. Add the butternut squash and cook till it’s tender but not too soft.
