Roasted zucchini in tahini

zucchini is one of my most favorite vegetables There is so much you can do with it.

In many Arabic restaurants it is served fried with yogurt.

Here it’s baked and served with tahini sauce

  • 2 zucchini, sliced lengthwise 

  • 1 tsp. salt

  • 1/2 tsp. pepper 

  • 2 tbsp olive oil

  • 1 tsp dried mint 

  • 1 tsp garlic powder 

  • 2 tbsp lemon juice

  • Tahini sauce (link)

  1. Preheat the oven to 400°.

  2. Mix the olive oil with the spices.

  3. Brush the zucchini with the oil mix.

  4. Bake, fry  or grill the zucchini. I bake them in the oven for 10 minutes (400°). Don’t over cook them. 

  5. Drizzle the zucchini with lemon juice, some more olive oil and tahini paste.
