Palmiers- buttery and flaky cookies

These are my favorite cookies in the world !

They are called palmiers in French because when slicing the dough, it forms a palm leaf

ingredients:

Basic and essy puff pastry dough

sugar and cinnamon

  1. Preheat the oven (375°)

  2. Mix 1/2 cup sugar with 2 tsp. cinnamon and set aside

  3. Roll the dough out to a square (10x10) , about 1/4 inch thick.

  4. Sprinkle cinnamon and sugar generously on the dough. Use a rolling pin to press the sugar.

  5. Fold the left and the right sides of the dough inward. so they meet in the middle. Fold both side agin towards the center, forming a long and narrow roll, just like rolling a scroll. Place in the freezer for 30 minutes.

  6. Take out and using a sharp knife, slice the dough into thin slices and place in a lined baking pan.

  7. Sprinkle generously with the remaining sugar and bake for 25 minutes or till brown.

  8. While cooling off, they will harden a bit and become flakier.
