One-pot dinner- Moroccan inspired orzo pasta, chicken and sun dried tomatoes

I am in love with this scrumptious dish. However, the reason for that has revealed to me the third time I made. Very simple. The easier the dish is, the yummier it is.

3 tbsp. olive oil

5 boneless chicken thighs, cubed

⅓ cup sun dried tomatoes

1 big onion, thinly sliced

3 garlic cloves, crushed

1 tbsp. Ras El Hanut

1 tsp. cumin

1 tbsp. paprika

Salt and pepper to taste

2 cups orzo pasta

2 cups hot water

  1. In a wide skillet, heat the oil and add the spices and tomatoes. Stir.

  2. Add the chicken and fry for 5 minutes.

  3. Add the onion and keep frying till the onion gets brown and the chicken is cooked. Add the garlic and stir for 30 seconds.

  4. Add the pasta and mix well.

  5. Add the hot water. Bring to a boil. Cover well.

  6. Lower the heat. Cook for 20 minutes. Remove from heat.
