Magic Broccoli slaw

The magic in this salad because once it sits in the dressing for a few hours, it is still crunchy but it also gets a bit soft and feels like half-cooked.

ingredients:

2 heads of broccoli, finely chopped

1 small red onion, chopped

2 tbsp. parsley, chopped

1/3 cup dried cranberries

1/2 cup toasted slivered almonds

For the dressing:

4 tbsp. low-calorie mayonnaise

1/4 cup of freshly squeezed lemon juice

Salt and pepper

1 tsp. sugar

  1. Place the vegetables in a big bowl

  2. In a shaker, put all of the ingredients of the dressing and shake well

  3. Pour the dressing over the vegetables and mix well

  4. Garnish with cranberries and almonds and serve
