No-bake coconut cookies

1 3/4 cups coconut

1 tbsp. lemon juice

1 cup sugar

3/; cup water

1/2 cup water

1 tbsp. orange blossom water- optional

1 tbsp. lemon juice

For rolling:

Coconut

  1. In a small sauce pan put the sugar, water, lemon juice and orange blossom water .

  2. Cook on low heat for 10 minutes. Remove from heat

  3. Add the coconut and mix well. Transfer to the fridge for at least 4 hours.

  4. At this point you can add food coloring or Flavoring extracts. I add natural extracts and coloring or make my own from raspberry purée, beet juice, spinach juice.

  5. Form balls and roll in coconut

  6. Store in the fridge or freeze.
